Port Phillip Estate Morillon Single Block Chardonnay draws from a tiny section of the winery's oldest Chardonnay block, planted in 1988 at Red Hill on the Mornington Peninsula.

The site is nestled among the folds of the undulating terrain. Though Red Hill is dominated by red basalt soils, the Chardonnay lies on a patch of sandy grey loams.

The fruit is gently whole bunch pressed directly in to French oak barriques, around 20% new. Fermentation begins spontaneously with ambient yeasts. After fermentation, the wine is aged on lees for one year.

The wine is only racked directly prior to bottling. There is no fining and only minimal filtration.

Light yellow, Port Phillip Estate Morillon Single Block Chardonnay has fleshy stone fruit flavours with an intense, lingering citrus acidity. Cellaring potential is five years.
